Best Bean and Veggie Tacos!

Tacos arenโ€™t just for carnivores! These bean tacos pack a delicious punch! Check it out!

(No animals were harmed in the making of these tacos! ๐Ÿ˜)

Ingredients:

15 oz can of black beans (or any bean of your choice!)

ยผ cup of chopped white onion

One clove of finely minced garlic (can also be roasted with the tomatoes for milder flavor)

2 cups of grape tomatoes

2 cups of handfuls of arugula

One avocado

One lime wedge

Green Tabasco or red if you like it spicier!๐Ÿ”ฅ

3 oz of freshly grated pasture-raised cheese; I use Kerry Gold

6 inch soft corn tortillas

Preparation

  • Rinse the beans under cold water.

  • On a shallow plate, mash the beans with a potato masher and add the onions, garlic, and a few dashes of Tabasco ๐Ÿ”ฅ

  • Roll into four separate balls and set aside.

  • Spray the tomatoes with olive oil, season with salt and pepper, add optional garlic, and roast in an air fryer at 400 degrees for 20 minutes. You can also roast them in the oven. The tomatoes should look brown and a little shriveled.

  • Mash the avocado with freshly squeezed lime juice and a few more dashes of the hot stuff! (Tabasco) ๐Ÿ”ฅ

Cooking Steps

  • In a shallow frying pan, pour just enough olive oil to coat the bottom of the pan. Make sure the pan is hot before you start frying.

  • Take one โ€œbean ballโ€ and mash it over a corn tortilla.

  • Fry the tortilla, put the bean side down for about 1-2 minutes, and flip to get the tortilla side.

  • Remove from the pan

  • Bean side up add:

  • cheese

  • Guacamole

  • Tomatoes

  • Arugula

  • Just a little more tabasco! ๐Ÿ”ฅ

Voila! Enjoy the best bean tacos ever!

This is a much healthier alternative to traditional chicken, beef, or pork tacos. Itโ€™s good for you and great for the planet! ๐Ÿ˜
